Healthy Ragi Ladoo Recipe

Nutritious Finger Millet Energy Balls

These wholesome Ragi Ladoos are packed with the goodness of finger millet, jaggery, dates, nuts, seeds, and coconut. Naturally sweetened and rich in fiber, calcium, and healthy fats, they make an excellent snack for both kids and adults.

Ingredients

Main Ingredients

  • 250 g ragi (finger millet) flour
  • 200 g jaggery, chopped
  • ½ to ¾ cup ghee (clarified butter)
  • 12–14 soft dates, deseeded
  • 1 cup grated coconut
  • ½ teaspoon cardamom powder
  • 3 tablespoons water

Nuts

  • ¼ cup almonds
  • ¼ cup cashews
  • ¼ cup walnuts
  • ¼ cup pistachios

Seeds & Dry Fruits

  • ¼ cup raisins
  • ¼ cup pumpkin seeds
  • 2 tablespoons melon seeds
  • 2 tablespoons white sesame seeds

Instructions

Step 1: Roast the Nuts

Heat 1 tablespoon ghee in a pan over medium heat. Add almonds, cashews, walnuts, and pistachios. Roast for 2–3 minutes until lightly golden and aromatic.

Add raisins and roast for another minute until they puff up. Transfer everything to a plate and allow it to cool completely.

Step 2: Roast the Seeds

In the same pan, add a little ghee and roast the pumpkin seeds and melon seeds for 1–2 minutes. Remove and cool.

Separately dry-roast the sesame seeds until lightly golden and fragrant. Set aside.

Step 3: Prepare the Nut Mixture

Once the roasted nuts and seeds have cooled completely, pulse them in a mixer grinder until you get a coarse mixture.

Avoid over-grinding, as the natural oils in the nuts can turn the mixture into a paste.

Step 4: Roast the Coconut

Add grated coconut to a pan and roast on low heat until it turns lightly golden and develops a nutty aroma. Remove and keep aside.

Step 5: Prepare the Dates

Blend the deseeded dates into a rough paste.

Heat a teaspoon of ghee in a pan and sauté the dates paste for 1–2 minutes until soft and aromatic.

Step 6: Make the Jaggery Syrup

Add jaggery and water to the same pan. Heat gently until the jaggery melts completely.

Allow the syrup to simmer for 2–3 minutes. Strain it through a sieve to remove any impurities.

Step 7: Roast the Ragi Flour

In a heavy-bottomed pan, add the remaining ghee and ragi flour.

Roast on low heat for 8–10 minutes, stirring continuously until the flour becomes aromatic and slightly darker in color.

Step 8: Combine Everything

Transfer the roasted ragi flour to a large mixing bowl.

Add:

  • Coarsely ground nuts and seeds
  • Roasted coconut
  • Roasted sesame seeds
  • Dates paste
  • Cardamom powder

Pour in the warm jaggery syrup and mix thoroughly.

Step 9: Shape the Ladoos

While the mixture is still warm, grease your palms lightly with ghee.

Take small portions and roll them into smooth, round ladoos.

If the mixture feels dry, add a little warm ghee as needed.

Step 10: Store and Serve

Allow the ladoos to cool completely before storing.

Place them in an airtight container and keep in a cool, dry place.

Approximately 30 ladoos

  • Stays fresh for up to 1 month at room temperature in an airtight jar.
  • Refrigerate for longer shelf life.
  • Ideal as a healthy snack, lunchbox treat, or post-workout energy bite.
