- 3 liters water
- 2 bay leaves
- 1-inch cinnamon stick

- 5 cloves
- 4 green cardamoms
- 1 star anise

- Juice of ½ lemon
- Salt (water should taste slightly salty)
For Saffron Milk
- ¼ cup warm milk
- 12–15 saffron strands

Step-by-Step Instructions
Step 1: Prepare the Fried Onions
Heat oil in a deep pan over medium heat.
Separate the onion slices and fry in batches until they become evenly golden brown and crisp.
Transfer them onto paper towels to cool completely.
Reserve about 3 tablespoons of the flavored oil for the chicken marinade.
Step 2: Make the Biryani Masala
Dry roast coriander seeds, cumin, shahi jeera, cinnamon, cloves, peppercorns, black cardamom, green cardamom, mace, dried red chilies, bay leaves, and nutmeg for 3–4 minutes on low heat.
