Soft Idli, Crispy Dosa & Flavorful Sambar

Nothing beats a traditional South Indian breakfast of soft idlis, crispy dosas, and aromatic sambar. This classic combination is healthy, filling, naturally fermented, and packed with protein. The fluffy idlis pair beautifully with the crispy golden dosas, while the vegetable-rich lentil sambar brings warmth and comforting flavors to every bite.

This homemade recipe uses simple pantry ingredients and produces authentic restaurant-style results without artificial additives, making it perfect for family breakfasts, brunches, or weekend meals.


Ingredients

For Idli & Dosa Batter

  • 3 cups idli rice
  • 1 cup whole urad dal
  • 2 tablespoons poha (flattened rice)
  • ½ teaspoon fenugreek seeds
  • Salt to taste
  • Water as required

For Sambar

Lentils

  • 1 cup toor dal
  • 3 cups water
  • ¼ teaspoon turmeric

Vegetables

  • 1 carrot, chopped
  • 1 potato, cubed
  • 8-10 shallots or 1 onion
  • 1 tomato, chopped
  • 6-8 drumstick pieces
  • ¼ cup pumpkin, diced
  • ¼ cup brinjal, cubed
  • 8-10 green beans, chopped

Tamarind

  • Small lemon-sized tamarind
  • 1 cup warm water

Sambar Masala

  • 2 tablespoons sambar powder
  • 1 teaspoon red chili powder (optional)
  • Salt to taste

Tempering

  • 2 tablespoons oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • 1 sprig curry leaves
  • 1 pinch asafoetida (hing)

Garnish

  • Fresh coriander leaves

Instructions

Step 1: Prepare the Batter

Wash the rice several times until the water runs clear.

Wash the urad dal with fenugreek seeds separately.

Soak:

  • Rice with poha for 6 hours
  • Urad dal with fenugreek seeds for 6 hours

Step 2: Grind the Batter

Grind the urad dal into a smooth, fluffy batter using chilled water.

Grind the rice into a slightly coarse batter.

Mix both batters thoroughly with clean hands for several minutes.

Add salt.

Cover and allow the batter to ferment for 8–12 hours in a warm place until doubled in volume.


Step 3: Make Soft Idlis

Grease idli plates lightly with oil.

Pour batter into the moulds.

Steam for 10–12 minutes.

Allow to rest for 2 minutes before removing.

Serve hot.


Step 4: Make Crispy Dosas

Stir the fermented batter gently.

Heat a cast iron or non-stick dosa tawa.

Lightly grease the surface.

Pour one ladle of batter in the center.

Spread into a thin circle.

Drizzle a little oil around the edges.

Cook until golden brown and crisp.

Fold and serve immediately.


Preparing the Sambar

Step 1: Cook the Dal

Pressure cook:

  • Toor dal
  • Turmeric
  • Water

Cook until soft.

Mash well.


Step 2: Cook the Vegetables

Add all chopped vegetables to a pot.

Pour enough water to cover.

Cook until tender.


Step 3: Add Tamarind

Soak tamarind in warm water.

Extract the juice.

Pour into the vegetables.

Cook for 5 minutes.


Step 4: Finish the Sambar

Add:

  • Mashed dal
  • Sambar powder
  • Salt
  • Chili powder (optional)

Simmer for 10–15 minutes.


Step 5: Tempering

Heat oil or ghee.

Add:

  • Mustard seeds
  • Cumin seeds
  • Dried red chilies
  • Curry leaves
  • Hing

Cook for 30 seconds.

Pour the tempering over the simmering sambar.

Mix gently.

Garnish with chopped coriander.
