Methi Thepla Recipe – Soft Gujarati Fenugreek Flatbread

Methi Thepla is a traditional Gujarati flatbread made with fresh fenugreek leaves, whole wheat flour, yogurt, sesame seeds, gram flour, and aromatic Indian spices. Soft, lightly spiced, and full of fresh methi flavour, these theplas are ideal for breakfast, lunchboxes, picnics, or travel.

Ingredients

  • 2 cups fresh fenugreek (methi) leaves, cleaned and finely chopped
  • 2 cups whole wheat flour (atta)
  • 2 tablespoons dried fenugreek leaves (kasuri methi)
  • 2 tablespoons oil
  • ¼ cup fresh curd (yogurt)
  • ¼ cup finely chopped fresh coriander leaves
  • 4–5 green chillies
  • 10–12 garlic cloves
  • 1-inch piece ginger
  • ½ teaspoon turmeric powder
  • 1 teaspoon Byadgi chilli powder or mild red chilli powder
  • Salt to taste
  • 1 tablespoon powdered sugar
  • 1 tablespoon white sesame seeds
  • ¼ teaspoon asafoetida (hing)
  • ½ teaspoon carom seeds (ajwain)
  • 2 tablespoons gram flour (besan)
  • Water, as required
  • 2–3 tablespoons oil for cooking the theplas

How to Make Methi Thepla

1. Prepare the methi

Separate the fresh methi leaves from any thick stems and rinse them thoroughly under clean running water. Drain well and finely chop the leaves. Try to remove excess water before adding them to the dough.

2. Make the chilli-ginger-garlic mixture

Add the green chillies, ginger, and garlic to a small grinder or mortar. Crush them into a coarse paste. Adjust the number of green chillies according to your preferred spice level.

3. Combine the dry ingredients

In a large mixing bowl, add the whole wheat flour and besan. Add turmeric, Byadgi chilli powder, salt, powdered sugar, sesame seeds, hing, ajwain, and crushed kasuri methi. Mix everything evenly.

4. Add the fresh ingredients

Add the chopped fresh methi, coriander leaves, and prepared ginger-garlic-green chilli mixture. Mix well so the methi is distributed throughout the flour.

5. Add curd and oil

Add the fresh curd and 2 tablespoons of oil. Mix everything together using your fingers.

The curd and oil help give the theplas a softer texture and add flavour.

6. Knead the dough

Begin kneading the mixture. Since fresh methi releases some moisture, add water a little at a time rather than pouring in too much at once.

Knead until you have a smooth, soft, and manageable dough. It should not be excessively sticky.

Cover the dough and allow it to rest for about 10–15 minutes.

7. Roll the theplas

Divide the rested dough into 10–12 equal portions and shape each portion into a smooth ball.

Dust the rolling surface lightly with wheat flour. Flatten one dough ball and roll it into a thin, round thepla, approximately 6–7 inches wide.

8. Cook on a tawa

Heat a tawa or flat pan over medium heat. Place the rolled thepla on the hot tawa.

Cook until small bubbles begin appearing on the surface. Flip it and cook the other side for about 30–40 seconds.

Drizzle or brush a small amount of oil around the edges and over the surface. Flip again and gently press with a spatula.

Cook until both sides develop light golden-brown spots.

9. Serve

Transfer the cooked thepla to a plate and repeat with the remaining dough.

Serve Methi Thepla warm with plain curd, pickle, chutney, or a cup of masala chai.

Tips for Soft Methi Thepla

Fresh methi should be drained properly after washing because excess water can make the dough sticky. Add water gradually while kneading, as the fenugreek leaves and curd already provide moisture.

Keep the dough soft but not overly loose. Avoid cooking the theplas for too long, as overcooking can make them dry. For lunchboxes or travel, allow the freshly cooked theplas to cool slightly before packing them.

Storage

Methi thepla tastes best when freshly prepared, but it can also be stored in an airtight container after cooling completely. For longer storage, refrigerate the theplas and reheat them briefly on a tawa before serving.

What to Serve with Methi Thepla

Methi thepla pairs especially well with:

  • Plain yogurt or raita
  • Mango or lemon pickle
  • Green coriander chutney
  • Chunda
  • Masala chai
  • A simple potato sabzi

Why is curd added to methi thepla?
Curd adds a mild tangy flavour and helps create a softer dough and tender theplas.

Can I make thepla without garlic?
Yes. Simply leave out the garlic if you prefer a garlic-free version.

Can I use only dried methi instead of fresh methi?
You can, but fresh fenugreek gives thepla its characteristic fresh flavour and texture. If available, using fresh methi is recommended.

Why is sugar added to thepla?
A small amount of sugar balances the natural bitterness of fenugreek and complements the spices. It should not make the thepla noticeably sweet.

Can methi thepla be packed for travel?
Yes. Thepla is a convenient travel food. Cook it properly, cool it before packing, and store it in a clean airtight container.
