Greek Salad Recipe – Fresh, Colorful & Easy Homemade Salad

Greek Salad is a refreshing Mediterranean-style salad made with crisp vegetables, olives, and creamy feta cheese, finished with a simple olive oil and lemon dressing. It is colorful, crunchy, and full of fresh flavors, making it an excellent choice for lunch, dinner, or a light side dish.

Unlike many creamy salads, this Greek-inspired salad relies on fresh vegetables, herbs, good-quality olive oil, and a touch of lemon for its flavor. It takes only a few minutes to prepare and requires no cooking.

Ingredients

For the Salad

  • 2 medium ripe tomatoes, cut into wedges or chunks
  • 1 large cucumber, sliced into thick half-moons
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, sliced into thin rings or strips
  • ½ cup Kalamata or other black olives
  • 150 g feta cheese, cut into cubes or roughly crumbled
  • 1 tablespoon fresh parsley, chopped, optional

For the Dressing

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • ½ teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper
  • Salt to taste

How to Make Greek Salad

Step 1: Prepare the Vegetables

Wash the tomatoes, cucumber, and bell pepper thoroughly. Pat them dry before cutting.

Cut the tomatoes into medium-sized wedges or chunks. Slice the cucumber into thick rounds or half-moons. Thinly slice the red onion and cut the green bell pepper into rings or strips.

Step 2: Combine the Salad

Place the tomatoes, cucumber, red onion, bell pepper, and olives in a large salad bowl.

Toss them very gently so the vegetables remain fresh and crisp.

Step 3: Prepare the Dressing

In a small bowl, combine the extra-virgin olive oil, lemon juice, red wine vinegar, dried oregano, black pepper, and a small amount of salt.

Whisk until the dressing is well combined.

Be careful with the salt because feta cheese and olives are naturally salty.

Step 4: Add the Feta

Arrange the feta cheese over the vegetables. You can use feta cubes, large crumbles, or place a larger piece of feta on top for a more traditional presentation.

Step 5: Dress the Salad

Pour the prepared dressing evenly over the vegetables and feta.

Gently toss once or twice, or leave the feta on top and allow everyone to mix the salad while serving.

Sprinkle with a little additional dried oregano and fresh parsley if desired.

Serve immediately.

Tips for the Best Greek Salad

Use ripe tomatoes: Tomatoes provide much of the natural juiciness and flavor, so choose ripe but firm tomatoes.

Keep the vegetables chunky: Greek salad tastes best when the cucumber, tomatoes, and peppers retain some bite.

Choose good olive oil: Since the dressing contains only a few ingredients, extra-virgin olive oil makes a noticeable difference.

Don’t overdress the salad: Add just enough dressing to coat the vegetables without leaving them swimming in oil.

Add feta at the end: This prevents the cheese from breaking down too much while the vegetables are being mixed.

Serve it fresh: The vegetables gradually release water after being salted and dressed, so Greek salad is best enjoyed shortly after preparation.

Optional Variations

Although the simple combination of vegetables, olives, and feta works beautifully, you can adjust the salad according to what you have available.

For extra crunch, add a few sliced radishes. Fresh oregano can replace dried oregano when available. You can also add a handful of lettuce for a larger everyday salad, although lettuce is not typically part of a traditional Greek village-style salad.

For a more filling meal, serve the salad with warm pita bread, roasted chickpeas, grilled paneer, or another protein of your choice.

What to Serve with Greek Salad

Greek Salad works well as a refreshing side dish with:

  • Warm pita or flatbread
  • Grilled vegetables
  • Roasted potatoes
  • Hummus
  • Grilled chicken
  • Mediterranean rice dishes
  • Pasta
  • Homemade soups

It can also be served on its own as a quick light lunch.

Storage

Greek Salad is best served immediately after preparation.

If you want to prepare it ahead, chop the vegetables and keep them refrigerated in an airtight container. Store the dressing separately and add the feta, olives, and dressing shortly before serving.

Once dressed, leftovers can be refrigerated in an airtight container for up to 1 day, although the vegetables will become softer and release some liquid.

Frequently Asked Questions

Is Greek Salad healthy?

Greek Salad contains plenty of fresh vegetables and uses olive oil as its main dressing ingredient. Feta and olives also add strong flavor, so only moderate quantities are needed. The exact nutritional profile depends on portion size and the ingredients used.

Can I make Greek Salad without feta?

Yes. You can leave out the feta for a dairy-free version or replace it with a suitable dairy-free feta-style alternative.

Can I prepare Greek Salad in advance?

You can chop the vegetables several hours ahead, but keep the dressing and feta separate. Combine everything shortly before serving for the best texture.

Which olives are best for Greek Salad?

Kalamata olives are a classic choice because of their rich, slightly fruity flavor. Other good-quality black or purple olives can also be used.

Do I need lettuce in Greek Salad?

No. A traditional Greek-style village salad generally focuses on tomatoes, cucumber, onion, peppers, olives, and feta rather than lettuce. However, lettuce can be added if you prefer a larger leafy salad.

Can I skip the red wine vinegar?

Yes. Increase the fresh lemon juice slightly if you don’t have red wine vinegar. The flavor will be somewhat different but still fresh and enjoyable.
