- 1 cup rava (semolina/sooji)
- 2 tablespoons oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 8–10 curry leaves
- 1 green chilli, finely chopped
- 1 teaspoon grated ginger
- 1 medium onion, finely chopped
- ¼ cup carrot, finely chopped
- ¼ cup green peas
- ¼ cup French beans, finely chopped
- ¼ cup capsicum, finely chopped
- 2½ cups water
- Salt to taste
- 2 tablespoons fresh coriander, chopped
- 1 tablespoon lemon juice
- 1 tablespoon roasted cashews, optional
Instructions
- Roast the rava: Heat a dry kadai or pan over low-medium heat. Add the rava and roast for about 4–5 minutes, stirring continuously. It should become aromatic without turning brown. Transfer it to a plate.
- Prepare the tempering: Heat oil or ghee in the same pan. Add mustard seeds and allow them to crackle. Add urad dal and chana dal and sauté until lightly golden.
- Add aromatics: Add curry leaves, chopped green chilli, and grated ginger. Sauté briefly until fragrant.
- Cook the onion: Add chopped onion and sauté for 2–3 minutes until it becomes soft and translucent.
- Add the vegetables: Add carrot, peas, French beans, and capsicum. Cook for about 4–5 minutes, stirring occasionally. Keep the vegetables slightly firm for better texture.
- Add water: Pour in 2½ cups of water and add salt. Mix well and bring the water to a gentle boil.
- Add roasted rava: Reduce the heat to low. Gradually add the roasted rava with one hand while continuously stirring with the other. This helps prevent lumps.
- Cook the upma: Cover and cook over low heat for 3–5 minutes, or until the rava absorbs the water and becomes soft and fluffy.
- Finish: Turn off the heat. Add lemon juice and chopped coriander. Gently fluff the upma with a spoon.
- Serve: Garnish with roasted cashews and a few fresh coriander leaves. Serve warm.
