Ingredients

For the Crispy Corn

  • 2 cups sweet corn kernels, fresh or frozen
  • 3 tablespoons cornflour
  • 2 tablespoons rice flour
  • ½ teaspoon red chilli powder
  • ¼ teaspoon black pepper powder
  • ¼ teaspoon salt
  • 1–2 teaspoons water, only if required
  • Oil for deep-frying

For the Chaat

  • ¼ cup finely chopped red onion
  • ¼ cup finely chopped tomato, seeds removed
  • 2 tablespoons finely chopped capsicum
  • 1 small green chilli, finely chopped, optional
  • 2 tablespoons chopped fresh coriander
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon chaat masala
  • ¼ teaspoon roasted cumin powder
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon black salt
  • Salt to taste
  • 2 tablespoons fine sev, optional
  • 1 tablespoon pomegranate seeds, optional

Instructions

  1. Bring enough water to a boil in a saucepan. Add the sweet corn kernels and cook for 3–4 minutes.
  2. Drain the corn completely and spread it on a clean kitchen towel or plate. Allow it to cool and dry for a few minutes.
  3. Transfer the corn to a mixing bowl. Add cornflour, rice flour, red chilli powder, black pepper, and salt.
  4. Toss until every corn kernel is evenly coated. If the flour does not stick, sprinkle one or two teaspoons of water and mix again. Avoid adding too much water.
  5. Heat oil in a deep pan over medium heat. Test the temperature by dropping one coated corn kernel into the oil. It should rise gradually and begin sizzling.
  6. Carefully add the coated corn in small batches. Cover the pan partially with a lid or splatter screen because corn kernels may pop while frying.
  7. Fry until the corn becomes crisp and light golden. Remove it with a slotted spoon and place it on absorbent kitchen paper.
  8. Let the fried corn cool for 2–3 minutes to help it become crispier.
  9. Place the crispy corn in a large mixing bowl. Add onion, tomato, capsicum, green chilli, coriander, chaat masala, roasted cumin powder, red chilli powder, black salt, and regular salt.
  10. Add lemon juice and toss gently until everything is well combined.
  11. Transfer the chaat to a serving bowl. Garnish with fine sev, coriander, and pomegranate seeds if desired.
  12. Serve immediately while the corn is still crisp.

Air-Fryer Method

  1. Prepare and coat the boiled corn as described above.
  2. Add 1–2 teaspoons of oil and toss well.
  3. Spread the corn in a single layer inside the air-fryer basket.
  4. Air-fry at 190°C for 12–16 minutes, shaking the basket every 4–5 minutes.
  5. Once golden and crisp, mix with the remaining chaat ingredients and serve immediately.

  • Fry the corn in small batches to prevent the oil temperature from dropping.
