Creamy Zucchini Soup is a light, comforting dish made with fresh zucchini, onion, garlic and herbs. The vegetables are gently cooked and blended until smooth, creating a naturally creamy texture without making the soup too heavy.
This simple homemade soup works well as a light lunch, an evening meal or a starter. Serve it warm with toasted bread, garlic bread or crunchy croutons.

- 3 medium zucchini, roughly chopped
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 small potato, peeled and diced
- 1 tablespoon butter

- 3 cups vegetable stock
- ½ cup milk or fresh cream
- ½ teaspoon dried oregano

Instructions
1. Prepare the vegetables
Wash the zucchini thoroughly and trim both ends. There is no need to peel it because the skin adds colour and nutrients. Chop the zucchini, onion and potato into small pieces so they cook evenly.
2. Sauté the aromatics
Heat the butter and olive oil in a deep saucepan over medium heat. Add the chopped onion and sauté for 3–4 minutes, until soft and translucent.
Add the minced garlic and cook for another 30 seconds. Avoid browning the garlic, as it may give the soup a bitter taste.
3. Cook the zucchini
Add the chopped zucchini and potato to the saucepan. Sprinkle in the oregano, thyme, black pepper and a little salt.
Cook for 4–5 minutes, stirring occasionally. The zucchini will begin to soften and release some moisture.
4. Simmer the soup
Pour in the vegetable stock and stir well. Bring the mixture to a gentle boil, then reduce the heat and cover the saucepan.
Simmer for 15–18 minutes, or until the zucchini and potato are completely tender.
5. Blend until smooth
Remove the saucepan from the heat and allow the mixture to cool slightly. Blend it with an immersion blender until smooth and creamy.
Alternatively, transfer the mixture carefully to a regular blender and process it in batches. Never overfill a blender with hot liquid.
6. Add the creamy element
Return the blended soup to low heat. Add the milk or fresh cream and stir until combined. Heat gently for 2–3 minutes without allowing the soup to boil vigorously.
If the soup is too thick, add a little warm stock or water until it reaches your preferred consistency.
7. Finish and serve
Add the lemon juice and taste the soup. Adjust the salt and black pepper as required.
