Instructions

1. Prepare the ingredients

Remove the pomegranate arils carefully and discard every piece of white membrane. Rinse the mint leaves gently and pat them dry.

2. Blend the juice

Add the pomegranate arils, mint leaves, lime juice and chilled water to a blender. Blend in short pulses for 15–20 seconds, just until the arils release their juice.

Avoid blending continuously because crushing the hard inner seeds too much can make the juice taste bitter.

3. Strain

Pour the mixture through a fine-mesh strainer into a jug. Press gently with the back of a spoon to extract the liquid without forcing crushed seed particles through.

4. Adjust the flavour

Taste the juice before adding sweetener. If the pomegranate is tart, stir in honey, maple syrup or sugar according to your preference.

Add a tiny pinch of black salt for a subtle savoury note, if desired.

5. Serve

Divide the juice between two glasses. Add ice cubes and garnish with fresh mint leaves and a few pomegranate arils. Serve immediately.
