Introduction

Creamy Cheese Macaroni Pasta is a comforting dish made with tender macaroni, colourful vegetables and a smooth homemade cheese sauce. It is mildly seasoned, family-friendly and easy to prepare for lunch, dinner or an after-school snack.

Ingredients

For the Macaroni

  • 2 cups elbow macaroni
  • 6 cups water
  • 1 teaspoon salt
  • 1 teaspoon oil

For the Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk, preferably at room temperature
  • 1 cup grated cheddar cheese
  • ¼ cup grated mozzarella cheese
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon chilli flakes
  • Salt to taste

Vegetables

  • ¼ cup finely chopped onion
  • ¼ cup diced red bell pepper
  • ¼ cup diced green bell pepper
  • ¼ cup sweet corn
  • 2 tablespoons finely chopped carrot
  • 1 small garlic clove, minced

Instructions

1. Cook the Macaroni

Bring the water to a boil in a large saucepan. Add salt, oil and macaroni.

Cook according to the package instructions until the macaroni is tender but still slightly firm. Drain the water and set the macaroni aside. Avoid overcooking it because it will cook briefly again in the sauce.

2. Sauté the Vegetables

Heat one tablespoon of butter in a wide pan over medium heat. Add the minced garlic and chopped onion.

Sauté for about one minute, then add the bell peppers, carrot and sweet corn. Cook for two to three minutes so the vegetables soften slightly while retaining some texture.

Transfer the vegetables to a plate.

3. Prepare the Cheese Sauce

In the same pan, melt the remaining butter over low heat. Add the flour and stir continuously for about one minute.

Gradually pour in the milk while whisking to prevent lumps. Cook over low to medium heat until the sauce becomes smooth and begins to thicken.

Reduce the heat before adding the cheddar and mozzarella. Stir gently until the cheese melts completely.

4. Combine Everything

Add black pepper, oregano, chilli flakes and a small amount of salt. Remember that cheese already contains salt, so taste the sauce before adding more.

Add the cooked vegetables and macaroni. Toss gently until every piece is evenly coated with the creamy cheese sauce.

If the sauce becomes too thick, add two or three tablespoons of warm milk and mix again.

5. Serve

Serve the Cheese Macaroni Pasta immediately while it is warm and creamy. Garnish with a little oregano, chilli flakes or freshly chopped parsley if desired.

Transfer the prepared pasta to a baking dish, sprinkle extra cheese and breadcrumbs on top, and bake at 200°C for 10–12 minutes or until lightly golden.

Serving Suggestions
