- 1 teaspoon grated ginger
- ½ teaspoon cumin seeds
- 1 teaspoon roasted cumin powder
- ½ teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- ½ teaspoon dry mango powder (amchur)
- Salt to taste
For Cooking
- 3–4 tablespoons ghee or oil
For Serving
- Fresh plain yogurt (curd)
- Homemade pickle
- Butter (optional)
- Fresh coriander leaves
Instructions
Step 1: Prepare the Dough
Mix the whole wheat flour, salt, and oil in a large bowl. Gradually add warm water and knead into a soft, smooth dough. Cover and let it rest for 20 minutes.
Step 2: Make the Filling
In another bowl, combine the mashed potatoes with green chilies, ginger, coriander, cumin seeds, roasted cumin powder, turmeric, coriander powder, red chili powder, garam masala, amchur, and salt. Mix well until evenly combined.
Step 3: Stuff the Parathas
Divide the dough into equal balls. Roll one ball into a small disc, place a generous portion of potato filling in the center, gather the edges, and seal completely.
Flatten gently and roll into a round paratha about 7–8 inches wide.
Step 4: Cook
Heat a cast-iron tawa or skillet over medium heat.
Place the rolled paratha on the hot pan. Cook for about 1 minute until small bubbles appear.
Flip and apply a little ghee or oil. Flip again and cook both sides until beautifully golden brown with crispy spots.
Repeat with the remaining dough.
Step 5: Serve
Serve hot with chilled yogurt, homemade pickle, and a small dollop of butter for an authentic North Indian meal.

Frequently Asked Questions
Why does my paratha break while rolling?
This usually happens if the filling contains excess moisture or the dough is too thin. Keep the filling dry and seal the edges properly.
Which potatoes work best?
Starchy potatoes are ideal because they mash easily and create a smooth filling.
Can I make the dough in advance?
Yes. Store it covered in the refrigerator for up to 24 hours and bring it to room temperature before rolling.
Can I make this recipe vegan?
Yes. Replace yogurt with plant-based yogurt and cook the parathas using vegetable oil instead of ghee.
How do I keep parathas soft?
Stack the cooked parathas in a covered casserole or wrap them in a clean kitchen towel until serving.
