Instructions

Step 1: Prepare the Dough

Mix the whole wheat flour, salt, and oil in a large bowl. Gradually add warm water and knead into a soft, smooth dough. Cover and let it rest for 20 minutes.

In another bowl, combine the mashed potatoes with green chilies, ginger, coriander, cumin seeds, roasted cumin powder, turmeric, coriander powder, red chili powder, garam masala, amchur, and salt. Mix well until evenly combined.

Step 3: Stuff the Parathas

Divide the dough into equal balls. Roll one ball into a small disc, place a generous portion of potato filling in the center, gather the edges, and seal completely.

Flatten gently and roll into a round paratha about 7–8 inches wide.

Step 4: Cook

Heat a cast-iron tawa or skillet over medium heat.

Place the rolled paratha on the hot pan. Cook for about 1 minute until small bubbles appear.

Flip and apply a little ghee or oil. Flip again and cook both sides until beautifully golden brown with crispy spots.

Repeat with the remaining dough.
