Introduction

Malai Kofta is one of the most popular North Indian vegetarian dishes, loved for its soft, melt-in-the-mouth kofta dumplings served in a rich, creamy tomato-cashew gravy. This restaurant-style recipe combines perfectly spiced potato and paneer koftas with a silky smooth gravy made using tomatoes, onions, cashews, cream, and aromatic Indian spices. Ingredients

For the Kofta

  • 2 medium potatoes, boiled and mashed
  • 200 g paneer (Indian cottage cheese), grated
  • 3 tablespoons cornflour
  • 2 tablespoons breadcrumbs
  • 2 tablespoons finely chopped cashews
  • 2 tablespoons raisins
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon red chili powder
  • Salt to taste
  • Oil for deep frying

For the Gravy

  • 3 large tomatoes, chopped
  • 2 medium onions, chopped
  • 12–15 cashews
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • ½ teaspoon garam masala
  • ½ teaspoon cumin powder
  • 1 teaspoon sugar (optional)
  • Salt to taste
  • ¾ cup fresh cream
  • 2 cups warm water
  • 1 teaspoon kasuri methi (crushed)
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Kofta Mixture

Mash the boiled potatoes until smooth. Add grated paneer, cornflour, breadcrumbs, cumin powder, garam masala, chili powder, and salt. Mix until the dough becomes soft and easy to shape.


Step 2: Stuff the Koftas

Take a small portion of the mixture and flatten it in your palm.

Place a few chopped cashews and raisins in the center.

Seal carefully and roll into smooth round balls.

Prepare all koftas similarly.


Step 3: Fry the Koftas

Heat oil over medium heat.

Deep fry the koftas until evenly golden brown and crispy.

Remove onto kitchen paper.

Avoid frying on high heat to prevent cracking.


Step 4: Prepare the Base

Boil tomatoes, onions, and cashews for about 10 minutes.

Allow to cool slightly.

Blend into a silky smooth puree.


Step 5: Cook the Gravy

Heat butter and oil in a heavy-bottom pan.

Add cumin seeds.

When they begin to splutter, add ginger-garlic paste.

Cook until fragrant.

Pour in the prepared puree.

Cook for 10–12 minutes while stirring occasionally.


Step 6: Add the Spices

Mix in:

  • Coriander powder
  • Turmeric
  • Kashmiri chili powder
  • Cumin powder
  • Salt
  • Sugar (optional)

Cook until the butter starts separating from the gravy.


Step 7: Finish the Curry

Add warm water.

Simmer for 8–10 minutes.

Mix in fresh cream, crushed kasuri methi, and garam masala.

Cook for another 2 minutes.

The gravy should be smooth, creamy, and slightly thick.


Step 8: Assemble

Place the fried koftas in a serving bowl.

Pour the hot gravy over them just before serving.

Garnish with:

  • Fresh cream drizzle
  • Chopped coriander
  • Slivered almonds
  • Cashew pieces

Serve immediately.
