Ingredients

For the Roasted Vegetables

  • 250 g cherry tomatoes
  • 1 medium zucchini (courgette), sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium red onion, cut into wedges
  • 4 garlic cloves, peeled
  • 2 tablespoons cornflour
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For the Pasta

  • 300 g pasta (fusilli, penne, macaroni, or shells)
  • Water for boiling
  • 1 teaspoon salt

For the Sauce

  • 3 tablespoons basil pesto
  • 120 ml fresh cream (heavy cream)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish
  • Crushed black pepper to taste

Instructions

Step 1: Prepare the Vegetables

  1. Preheat your oven to 200°C (400°F).
  2. Place the cherry tomatoes in a large roasting dish.
  3. Sprinkle over the cornflour, paprika, salt, and black pepper.
  4. Toss well until the tomatoes are lightly coated.

Step 2: Add Remaining Vegetables

  1. Add the zucchini, bell peppers, onion, and garlic to the roasting dish.
  2. Drizzle with olive oil.
  3. Toss everything until evenly coated.

Step 3: Roast

  1. Roast for 25–30 minutes until the vegetables become tender and lightly caramelized.
  2. Stir once halfway through for even roasting.

Step 4: Cook the Pasta

  1. While the vegetables roast, bring a large pot of salted water to a boil.
  2. Cook the pasta according to the package directions until al dente.
  3. Reserve about ½ cup of pasta water before draining.

Step 5: Finish the Sauce

  1. Remove the roasted vegetables from the oven.
  2. Stir in the basil pesto and fresh cream until everything is evenly coated.
  3. Return the dish to the oven for 3–5 minutes to warm through.

Step 6: Combine

  1. Add the cooked pasta to the roasting dish.
  2. Toss gently until every piece is coated in the creamy pesto sauce.
  3. Add a splash of reserved pasta water if needed for a silkier consistency.
  4. Sprinkle with Parmesan cheese if using.

Step 7: Serve

Serve immediately, garnished with fresh basil leaves and freshly cracked black pepper.
