  • 2 cups thick poha (flattened rice)
  • 1/3 cup raw peanuts
  • 1 medium onion, finely chopped
  • 1–2 green chillies, finely chopped
  • 1/2 teaspoon mustard seeds
  • 8–10 fresh curry leaves
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon sugar, optional
  • Salt to taste
  • 2 tablespoons cooking oil
  • 2 tablespoons fresh coriander leaves, chopped
  • 1–2 tablespoons fresh lemon juice
  • 2 tablespoons water, if required

How to Make Classic Poha with Peanuts

1. Prepare the Poha

Place the poha in a colander and rinse it gently under running water for a few seconds. Avoid soaking it for too long, as this can make the poha mushy.

Drain thoroughly and leave it aside for about 5 minutes. The poha will absorb the remaining moisture and soften naturally.

Sprinkle a little salt and turmeric over the softened poha and gently mix.

2. Roast the Peanuts

Heat the oil in a wide pan over medium-low heat.

Add the peanuts and roast them for 3–4 minutes, stirring frequently, until they become lightly golden and crunchy.

Remove the roasted peanuts from the pan and keep them aside.

3. Prepare the Tempering

Using the same pan and remaining oil, add the mustard seeds.

Once they begin to crackle, add the curry leaves and chopped green chillies. Stir for a few seconds until aromatic.

4. Cook the Onion

Add the finely chopped onion and cook over medium heat for about 3–4 minutes.

The onion should become soft and slightly translucent without turning too brown.

5. Add the Poha

Reduce the heat and add the prepared poha to the pan.

Gently toss everything together so that the onion and tempering are evenly distributed throughout the poha.

Add the optional sugar and adjust the salt according to taste.

If the poha appears slightly dry, sprinkle 1–2 tablespoons of water over it.

6. Add the Peanuts

Return most of the roasted peanuts to the pan and gently mix.

Cover the pan and cook over low heat for approximately 2–3 minutes. This allows the poha to warm through while remaining soft and fluffy.

Turn off the heat.

7. Finish with Lemon and Coriander

Add freshly chopped coriander leaves and lemon juice.

Gently toss once more. Taste and adjust the salt or lemon juice if necessary.

Serve immediately while warm.
