Chicken Tikka Masala is a comforting Indian-style curry made with tender pieces of marinated chicken cooked in a smooth, creamy tomato-based gravy. The chicken is first coated with yogurt, spices, ginger, and garlic, then cooked until lightly charred before being added to the rich masala sauce.

Ingredients

For the Chicken Tikka

  • 500 g boneless chicken, cut into bite-sized pieces
  • ½ cup thick plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon Kashmiri red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon salt, or to taste
  • 1 tablespoon cooking oil

For the Masala Gravy

  • 2 tablespoons butter
  • 1 tablespoon cooking oil
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 medium tomatoes, finely chopped or puréed
  • 1 teaspoon Kashmiri red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon garam masala
  • ½ teaspoon salt, or according to taste
  • ½ cup water, plus more if required
  • ⅓ cup fresh cream
  • 1 teaspoon kasuri methi (dried fenugreek leaves), crushed
  • 1 tablespoon chopped fresh coriander

Instructions

1. Marinate the Chicken

Place the chicken pieces in a large mixing bowl. Add yogurt, ginger-garlic paste, lemon juice, Kashmiri chilli powder, turmeric, coriander powder, cumin powder, garam masala, salt, and oil.

Mix thoroughly until every piece of chicken is evenly coated.

Cover and refrigerate for at least 30 minutes. For deeper flavor, you can marinate the chicken for 1–2 hours.

2. Cook the Chicken Tikka

Heat a heavy frying pan or grill pan over medium-high heat.

Arrange the marinated chicken pieces in a single layer without overcrowding the pan. Cook for approximately 8–12 minutes, turning occasionally, until the chicken develops lightly browned and charred edges and is completely cooked through.

Cook in batches if necessary.

Transfer the cooked chicken to a plate and keep aside.

3. Prepare the Masala Base

Heat butter and oil in a deep pan over medium heat.

Add the finely chopped onion and cook for 5–7 minutes, stirring regularly, until soft and golden.

Add the ginger-garlic paste and sauté for about 1 minute until aromatic.

4. Add Tomatoes and Spices

Add the chopped or puréed tomatoes. Cook for 6–8 minutes until they soften and the mixture becomes thick.

Add Kashmiri chilli powder, coriander powder, cumin powder, turmeric, garam masala, and salt.

Mix well and cook for another 2–3 minutes over low to medium heat.

If the masala begins sticking to the pan, add a small splash of water.

5. Make the Gravy

Pour in approximately ½ cup water and stir well.

Bring the gravy to a gentle simmer and cook for about 5 minutes. For a smoother restaurant-style texture, allow the mixture to cool slightly and blend it before returning it to the pan.

6. Add the Chicken

Add the cooked chicken tikka pieces to the gravy.

Mix gently so the chicken is completely coated with the sauce. Cover and simmer over low heat for 5–7 minutes, allowing the chicken to absorb the flavors.

7. Finish with Cream

Reduce the heat to low and stir in the fresh cream.

Add crushed kasuri methi and mix gently. Simmer for another 2 minutes without allowing the curry to boil vigorously.

Taste and adjust the salt or consistency if required.

Finish with freshly chopped coriander.

Allow leftovers to cool before transferring them to an airtight container.

When reheating, warm gently in a saucepan until piping hot throughout. Add a small splash of water if the gravy has thickened in the refrigerator.
