  • 1 tablespoon fresh lime juice
  • ½ teaspoon lime zest
  • Salt to taste
  • ¼ teaspoon freshly ground black pepper

  • 2 tablespoons chopped fresh coriander

Instructions

1. Prepare the Aromatic Base

Heat the coconut oil in a large saucepan over medium heat. Add the sliced onion and cook for 3–4 minutes, stirring occasionally, until it begins to soften.

Add the garlic, ginger, lemongrass and sliced chilli. Cook for approximately one minute until the ingredients become fragrant. Avoid browning the garlic.

2. Add the Vegetables

Add the carrot, red bell pepper, broccoli, mushrooms and baby corn. Stir everything together and cook for 3–4 minutes.

The vegetables do not need to become completely tender at this stage because they will continue cooking in the broth.

3. Build the Soup

Pour in the vegetable stock and bring the mixture to a gentle boil. Reduce the heat, cover partially and simmer for approximately 8 minutes.

Add the coconut milk, soy sauce and brown sugar. Stir gently until the coconut milk is completely combined with the broth.

4. Simmer Until Tender

Continue simmering the soup over low to medium heat for another 7–8 minutes. The vegetables should be tender but should still retain some texture.

Avoid rapidly boiling the soup after adding the coconut milk, as gentle heating helps maintain its smooth consistency.

5. Add the Final Flavours

Remove and discard the large lemongrass pieces. Add the spinach and cook for one minute, or until it has just wilted.

Turn off the heat and stir in the lime juice, lime zest, black pepper and chopped coriander. Taste the soup and add salt if required.

6. Serve

Ladle the hot soup into individual bowls. Garnish with sliced spring onions, fresh coriander and a few thin chilli slices if you prefer additional heat.
