Mushroom Masala Curry Recipe

Mushroom Masala Curry is a comforting Indian dish made with fresh mushrooms simmered in a flavourful onion-tomato gravy. Warm spices, ginger, garlic and a small amount of cream give the curry a balanced, restaurant-style taste while keeping the preparation simple enough for home cooking.

This versatile mushroom curry pairs beautifully with roti, naan, paratha or steamed rice. It is suitable for everyday family meals as well as relaxed weekend dinners.

Ingredients

For the Curry

  • 250 grams button mushrooms
  • 2 tablespoons cooking oil
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped or puréed
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 green chilli, finely chopped
  • ¼ teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon kasuri methi
  • ½ teaspoon salt, or according to taste
  • ¾ cup water
  • 3 tablespoons fresh cream
  • 2 tablespoons chopped coriander leaves

Whole Spices

  • ½ teaspoon cumin seeds
  • 1 small bay leaf
  • 1 small cinnamon stick
  • 2 cloves

Preparation

  1. Clean the mushrooms gently using a damp kitchen cloth or rinse them quickly under running water. Pat them dry immediately so they do not absorb excess water.
  2. Trim the ends of the stems and cut the mushrooms into halves or thick slices, depending on their size.
  3. Finely chop the onion, tomatoes, green chilli and coriander leaves before beginning the cooking process.

How to Make Mushroom Masala Curry

Step 1: Sauté the Mushrooms

Heat one tablespoon of oil in a wide pan over medium-high heat.

Add the sliced mushrooms and sauté them for four to five minutes. Cook until they begin to soften and develop a light golden colour.

Transfer the mushrooms to a plate and keep them aside. Avoid overcooking them at this stage because they will continue cooking in the gravy.

Step 2: Prepare the Masala Base

Add the remaining tablespoon of oil to the same pan.

Add cumin seeds, bay leaf, cinnamon and cloves. Allow the spices to sizzle for a few seconds until aromatic.

Add the finely chopped onion and cook over medium heat for six to eight minutes. Stir occasionally until the onion becomes soft and lightly golden.

Add the ginger paste, garlic paste and chopped green chilli. Cook for approximately one minute or until the raw aroma disappears.

Step 3: Cook the Tomatoes and Spices

Add the chopped or puréed tomatoes and a small pinch of salt. Cook for six to seven minutes, stirring regularly, until the tomatoes soften and the oil begins to separate from the masala.

Lower the heat and add turmeric, Kashmiri red chilli powder, coriander powder and cumin powder.

Mix well and cook the spices for one minute. If the masala begins sticking to the pan, add one or two tablespoons of water.

Step 4: Make the Curry

Pour in ¾ cup of water and mix thoroughly, scraping any flavourful masala from the bottom of the pan.

Bring the gravy to a gentle simmer. Add the sautéed mushrooms and salt according to taste.

Cover the pan and cook over low to medium heat for six to eight minutes. Stir once or twice while cooking.

Step 5: Finish the Curry

Crush the kasuri methi between your palms and add it to the curry.

Stir in the garam masala and fresh cream. Cook uncovered over low heat for another two minutes.

Turn off the heat and garnish the Mushroom Masala Curry with freshly chopped coriander leaves.

Replace the fresh cream with thick coconut milk or blended cashew cream. Make sure that the remaining ingredients are suitable for your dietary preferences.

Mushroom Peas Masala

Add ½ cup of green peas along with the sautéed mushrooms. Frozen peas can be added directly after rinsing.

Mushroom Capsicum Masala

Sauté ½ cup of sliced capsicum with the mushrooms. Keep the capsicum slightly crisp for a pleasant contrast in texture.

Cashew Mushroom Curry

Blend eight soaked cashews with a little water and add the paste instead of fresh cream. This gives the gravy a naturally rich consistency.

Storage and Reheating

Allow leftover curry to cool before transferring it to a clean, airtight container. Refrigerate it promptly and consume it within two days.

Reheat the curry gently in a pan over low heat. Add a small splash of water if the gravy has thickened in the refrigerator.

Freezing is not recommended because mushrooms and cream may develop a different texture after thawing.
