Instructions

Step 1: Prepare the Avocado Spread

  1. Cut the avocados in half and remove the pits.
  2. Scoop the flesh into a bowl.
  3. Add lemon juice, salt, black pepper, and chopped coriander.
  4. Mash until smooth and creamy.

Step 2: Toast the Bread

  1. Lightly toast the bread slices for extra crunch if desired.
  2. Allow them to cool slightly.

Step 3: Assemble the Sandwich

  1. Spread the avocado mixture generously on two bread slices.
  2. Layer with lettuce, cucumber, tomato, and onion slices.

  4. Cover with the remaining bread slices.
