How to Make Chicken Clear Soup

Step 1: Cook the Chicken

Place the chicken in a large pot with water. Add a little salt, ginger, and half of the garlic. Simmer for about 20 minutes until the chicken is fully cooked.

Remove the chicken and shred it into bite-sized pieces. Strain the broth and keep it aside.


Step 2: Cook the Vegetables

Heat oil or butter in a soup pot.

Add the remaining garlic and sauté for about one minute until fragrant.

Add onion, carrot, cabbage, and French beans. Cook for 3–4 minutes while stirring occasionally.

Pour the reserved chicken broth into the pot.

Add the shredded chicken.

Season with salt, black pepper, and soy sauce if using.

Let everything simmer gently for 10–12 minutes until the vegetables become tender but still retain a slight crunch.


Step 4: Garnish & Serve

Turn off the heat.

Sprinkle chopped spring onions and fresh coriander or parsley over the soup.

Serve immediately while hot.
