- ¼ cup kidney beans (rajma)
- 4 cups water
- 1 teaspoon salt
For the Masala
- 2 tablespoons butter
- 1 tablespoon oil
- 1 medium onion, finely chopped
- 2 teaspoons ginger-garlic paste
- 2 large tomatoes, pureed
- 2 green chilies, finely chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon Kashmiri red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- ½ teaspoon garam masala
- Salt to taste
For Finishing
- 2 tablespoons fresh cream
- 1 tablespoon butter
- 1 teaspoon crushed kasuri methi (dried fenugreek leaves)
- Fresh coriander leaves, chopped
Instructions
Step 1: Soak the Lentils
Wash the black urad dal and kidney beans thoroughly. Soak them together in plenty of water for at least 8 hours or overnight.
Step 2: Pressure Cook
Drain the soaked lentils and beans. Add them to a pressure cooker with fresh water and salt. Cook for 8–10 whistles or until both are soft and tender. Reserve the cooking liquid.
Step 3: Prepare the Masala
Heat butter and oil in a heavy-bottomed pan. Add cumin seeds and let them crackle.
Add the chopped onions and sauté until light golden.
Stir in the ginger-garlic paste and cook until the raw aroma disappears.
Step 4: Add Tomatoes and Spices
Mix in the tomato puree and green chilies. Cook for 8–10 minutes until the oil begins to separate.
Add Kashmiri chili powder, turmeric, coriander powder, cumin powder, and salt. Stir well.
Step 5: Combine Everything
Add the cooked lentils and kidney beans along with some reserved cooking liquid. Mix thoroughly.
Simmer on low heat for 30–40 minutes, stirring occasionally. Add extra water if needed for your preferred consistency.
Step 6: Finish the Dal
Stir in butter, crushed kasuri methi, garam masala, and fresh cream.
Cook for another 5 minutes on low heat.
Garnish with chopped coriander leaves and a swirl of fresh cream before serving.
