Egg Curry is a classic Indian comfort food made with hard-boiled eggs simmered in a rich, aromatic onion-tomato gravy infused with traditional spices. This wholesome recipe is perfect for busy weeknights, family dinners, or weekend meals. The creamy texture of the curry combined with perfectly cooked eggs creates a satisfying dish that pairs beautifully with steamed rice, jeera rice, naan, chapati, or paratha.

This homemade egg curry is prepared using simple pantry ingredients without any artificial flavors or preservatives, making it a delicious and family-friendly meal for all occasions.


Ingredients

For the Eggs

  • 6 large eggs
  • Water for boiling
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1 tablespoon oil
  • Salt to taste

For the Curry

  • 2 tablespoons cooking oil
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 2 medium onions, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 3 medium tomatoes, finely chopped or pureed
  • 2 green chilies, slit (optional)

Spices

  • 1 teaspoon turmeric powder
  • 1½ teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon Kashmiri red chili powder
  • ½ teaspoon garam masala
  • Salt to taste

For the Gravy

  • 1½ cups hot water
  • 2 tablespoons fresh cream (optional)
  • 1 teaspoon kasuri methi (crushed)
  • Fresh coriander leaves, chopped

Instructions

Step 1: Boil the Eggs

Place the eggs in a saucepan and cover with water. Bring to a boil and cook for 10–12 minutes. Transfer them immediately to cold water, peel, and lightly score the eggs with a knife.


Step 2: Lightly Fry the Eggs

Heat 1 tablespoon oil in a pan. Sprinkle turmeric, red chili powder, and a pinch of salt over the eggs. Fry them gently for 2–3 minutes until lightly golden. Remove and keep aside.

Tip: Frying the eggs enhances their flavor and prevents them from breaking in the curry.


Step 3: Prepare the Masala

Heat oil in a deep pan.

Add:

  • Cumin seeds
  • Bay leaves

Allow them to splutter.

Add chopped onions and sauté for 8–10 minutes until golden brown.

Mix in ginger-garlic paste and cook for another minute.

Add tomatoes and cook until soft and the oil begins separating from the masala.


Step 4: Add the Spices

Stir in:

  • Turmeric
  • Coriander powder
  • Cumin powder
  • Kashmiri red chili powder
  • Salt

Cook the spice mixture for 2–3 minutes over medium heat.


Step 5: Make the Curry

Pour in hot water and stir well.

Simmer for 6–8 minutes until the gravy thickens slightly.

Crush kasuri methi between your palms and add it to the curry.

Mix in garam masala.

If you prefer a richer curry, stir in fresh cream.


Step 6: Add the Eggs

Carefully place the fried eggs into the simmering gravy.

Cook for another 5 minutes so the eggs absorb the flavors.

Garnish generously with chopped coriander leaves.

Serve hot.
