Ingredients

  • 250 grams fresh spinach (palak), washed and chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 1 small potato, peeled and diced
  • 1 tablespoon butter or olive oil
  • 4 cups vegetable stock or water
  • ¼ teaspoon black pepper powder
  • Salt to taste
  • 2 tablespoons fresh cream (optional)
  • 1 tablespoon lemon juice

Instructions

Step 1: Sauté the Vegetables

Heat butter or olive oil in a deep pan. Add chopped onion and garlic. Sauté for 2–3 minutes until soft and fragrant.

Step 2: Cook the Spinach

Add diced potato and chopped spinach. Cook for 3–4 minutes until the spinach wilts.

Step 3: Simmer

Pour in the vegetable stock or water. Bring to a boil, then reduce heat and simmer for 12–15 minutes until the vegetables are tender.

Step 4: Blend

Allow the mixture to cool slightly. Blend until smooth using a hand blender or regular blender.

Step 5: Season

Return the soup to the pan. Add salt, black pepper, and lemon juice. Simmer for 2–3 minutes.

Step 6: Serve

Stir in fresh cream if desired and serve hot.
