Ingredients

For the Spaghetti

  • 250 g spaghetti
  • 5–6 cups water
  • 1 teaspoon salt
  • 1 teaspoon olive oil
  • 2 medium ripe tomatoes

For the Tomato Basil Sauce

  • 2 tablespoons olive oil
  • 5 garlic cloves, finely chopped
  • 1 medium onion, finely chopped
  • 1 small green capsicum, finely chopped
  • ½ teaspoon salt (or to taste)
  • 1 teaspoon sugar
  • ½ teaspoon black pepper powder
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh basil (or 1 teaspoon dried basil)
  • 2 tablespoons tomato ketchup (optional)
  • 2 tablespoons chopped spring onions
  • ¼ cup grated Parmesan or mozzarella cheese

Step-by-Step Instructions

Step 1: Cook the Spaghetti

Bring 5–6 cups of water to a rolling boil in a large pot.

Add:

  • Salt
  • Olive oil

Add the spaghetti and cook for about 6–7 minutes until partially cooked.

Place the whole tomatoes into the same boiling water and blanch for about 5 minutes, or until the skins begin to split.

Remove the tomatoes and allow them to cool slightly.

Continue cooking the spaghetti until it is al dente (firm to the bite), approximately another 4–5 minutes.

Drain the pasta, reserving about ½ cup of pasta cooking water.

Rinse the spaghetti briefly under cold running water to stop further cooking. Set aside.

Step 2: Prepare Fresh Tomato Puree

Peel the blanched tomatoes.

Discard the skins.

Blend the tomatoes into a smooth puree and keep it ready.

Step 3: Make the Tomato Basil Sauce

Heat olive oil in a large pan over medium heat.

Add:

  • Chopped garlic
  • Chopped onion

Sauté until the onions become soft and lightly golden.

Pour in the fresh tomato puree and season with salt.

Cook for 4–5 minutes until the tomato loses its raw flavor.

Add:

  • Chopped capsicum
  • Sugar
  • Black pepper
  • Chili flakes
  • Oregano
  • Basil
  • Tomato ketchup

Mix everything well and cook for another 2–3 minutes until the sauce thickens slightly and begins releasing oil around the edges.

Step 4: Combine Everything

Add the cooked spaghetti to the prepared sauce.

If needed, pour in a few tablespoons of the reserved pasta water to loosen the sauce.

Toss gently until every strand is evenly coated.

Mix in:

  • Chopped spring onions
  • Grated cheese

Cook for another minute while tossing continuously.

Serving Suggestions

Serve the vegetarian spaghetti immediately while hot with:

  • Freshly grated Parmesan cheese
  • Extra basil leaves
  • Garlic bread
  • Toasted herb bread
  • Caesar salad or fresh green salad
  • Roasted vegetables
  • Chilled lemonade or iced tea

Chef’s Tips

  • Cook the spaghetti only until al dente for the best texture.
  • Fresh tomatoes provide a brighter and more natural flavor than canned puree.
  • Reserve some pasta water to create a silky, restaurant-style sauce.
  • Use freshly grated Parmesan for richer taste.
  • Add mushrooms, olives, zucchini, broccoli, or spinach for extra vegetables.
  • Increase chili flakes if you prefer a spicy pasta.

Storage Instructions

Refrigerator: Store in an airtight container for up to 3 days.

Freezer: Freeze without cheese for up to 1 month.

Reheating: Warm in a pan with a splash of water or olive oil until heated through.

Frequently Asked Questions

Why should spaghetti be cooked al dente?

Al dente pasta stays firm, holds its shape better, and absorbs sauce more effectively without becoming mushy.

Can I make this recipe vegan?

Yes. Simply omit the cheese or use your favorite dairy-free alternative.

Which cheese works best?

Parmesan is traditional, while mozzarella provides a softer, creamier texture.

Can I use whole wheat spaghetti?

Absolutely. Whole wheat spaghetti adds extra fiber and a slightly nutty flavor.

Is tomato ketchup necessary?

No. It adds a hint of sweetness but can be omitted if you prefer a more authentic tomato sauce.
