  • 1 cup sweet corn kernels

  • 5 cups water
  • 1 tablespoon corn flour
  • 2 tablespoons water (for slurry)
  • 1 teaspoon sugar
  • ½ teaspoon black pepper powder
  • Salt to taste
  • 1 tablespoon butter
  • 1 tablespoon fresh coriander, finely chopped

Instructions

Step 1: Boil the Sweet Corn

Boil the sweet corn kernels in water for 2–3 minutes. Drain and allow them to cool slightly.

Step 2: Prepare the Corn Puree

Take about ½ cup of the boiled corn and grind it with a little water to make a smooth paste or puree.

Step 3: Start the Soup Base

In a large soup pan, add 5 cups of water. Add the remaining boiled corn kernels, chopped carrots, chopped beans, and salt to taste.

Step 4: Cook the Vegetables

Bring the mixture to a boil and cook until the vegetables begin to soften.

Step 5: Add the Corn Puree

Add the prepared corn puree to the boiling soup. Stir well, then add sugar and black pepper powder. Let the soup boil for 2 minutes.

Step 6: Prepare the Corn Flour Slurry

In a small bowl, combine corn flour and 2 tablespoons of water. Mix well until a smooth slurry forms without lumps.

Step 7: Thicken the Soup

Slowly pour the slurry into the boiling soup while stirring continuously. This helps create a smooth and slightly thick texture.

Step 8: Simmer the Soup

Mix well and allow the soup to boil for another 2–3 minutes until it thickens.

Step 9: Add Butter and Coriander

Add butter and freshly chopped coriander leaves. Let the soup simmer for 1 minute.

Step 10: Serve Hot

Turn off the heat and serve the Sweet Corn Soup hot in serving bowls.
