Kairi Panna, also known as Aam Panna, is a refreshing Indian summer drink made with raw mangoes, mint, and aromatic spices. This traditional beverage is loved for its tangy-sweet flavor and cooling properties, making it perfect for hot days.

Ingredients

  • 2 medium raw mangoes (kairi)
  • 4 cups water
  • 4 tablespoons sugar (adjust to taste)
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon black salt
  • ¼ teaspoon regular salt
  • 8–10 fresh mint leaves
  • Ice cubes as needed
  • Fresh mint leaves for garnish

Instructions

Step 1: Cook the Raw Mangoes

Wash the raw mangoes thoroughly. Place them in a saucepan with enough water and boil for 10–15 minutes until soft and tender.

Step 2: Cool and Extract the Pulp

Allow the cooked mangoes to cool completely. Peel the skin and remove the seed. Scoop out the soft pulp into a bowl.

Step 3: Prepare the Concentrate

Transfer the mango pulp to a blender. Add sugar, roasted cumin powder, black salt, regular salt, and mint leaves. Blend until smooth.

Step 4: Make the Drink

Add the mango mixture to a large pitcher. Pour in 4 cups of chilled water and mix well until everything is combined.

Step 5: Serve

Fill serving glasses with ice cubes. Pour the Kairi Panna into the glasses and garnish with fresh mint leaves.

Tips for Best Results

  • Choose firm, green raw mangoes for the authentic tangy flavor.
  • Adjust sugar according to the sourness of the mangoes.
  • For extra freshness, add a few crushed mint leaves before serving.
  • Store the concentrate in the refrigerator for up to 3 days.
