Ingredients

- 1–2 tablespoons milk (if needed)
For the Sugar Syrup
- 2 cups sugar
- 2 cups water
- ½ teaspoon lemon juice
- 3–4 green cardamom pods, lightly crushed
- A few saffron strands (optional)
For Frying
- Ghee or neutral cooking oil
Instructions
Step 1: Prepare the Dough
- Grate the khoya and paneer into a large mixing bowl.
- Add maida, baking soda, and cardamom powder.
- Mix gently and knead into a smooth, soft dough.
- If the mixture feels dry, add a little milk, one teaspoon at a time.
- Cover and let the dough rest for 5 minutes.
Step 2: Shape the Jamuns
- Divide the dough into 16 equal portions.
- Roll each portion into a smooth ball without cracks.
- Keep the balls covered with a cloth to prevent drying.
Step 3: Make the Sugar Syrup
- In a saucepan, combine sugar and water.
- Bring the mixture to a gentle boil.
- Add lemon juice to prevent crystallization.
- Add crushed cardamom pods and saffron, if using.
- Simmer for 5–6 minutes until the syrup is slightly sticky.
- Keep the syrup warm.
Step 4: Fry the Gulab Jamuns
- Heat ghee or oil in a deep pan over low-medium heat.
- Test with a small dough piece—it should rise slowly without browning immediately.
- Carefully add a few balls at a time.
- Stir gently and continuously for even cooking.
- Fry until they become deep golden brown on all sides.
- Remove and drain on a plate lined with paper towels.
Step 5: Soak in Syrup
- Let the fried gulab jamuns cool for 2–3 minutes.
- Transfer them into the warm sugar syrup.
- Allow them to soak for at least 1 hour.
- The jamuns will absorb the syrup and become soft and juicy.
