Gulab Jamun Recipe

Gulab Jamun is one of India’s most loved desserts, featuring soft, melt-in-the-mouth milk-solid dumplings soaked in fragrant sugar syrup. This homemade recipe creates rich, delicious gulab jamuns that are perfect for festivals, celebrations, or special family meals.

Ingredients

For the Gulab Jamuns

  • 250 gram cups khoya (milk solids), grated
  • 50 gram cup paneer (cottage cheese), grated
  • 3 tablespoons maida (all-purpose flour)
  • ¼ teaspoon baking soda
  • ¼ teaspoon cardamom powder
  • 1–2 tablespoons milk (if needed)

For the Sugar Syrup

  • 2 cups sugar
  • 2 cups water
  • ½ teaspoon lemon juice
  • 3–4 green cardamom pods, lightly crushed
  • A few saffron strands (optional)

For Frying

  • Ghee or neutral cooking oil

Instructions

Step 1: Prepare the Dough

  1. Grate the khoya and paneer into a large mixing bowl.
  2. Add maida, baking soda, and cardamom powder.
  3. Mix gently and knead into a smooth, soft dough.
  4. If the mixture feels dry, add a little milk, one teaspoon at a time.
  5. Cover and let the dough rest for 5 minutes.

Step 2: Shape the Jamuns

  1. Divide the dough into 16 equal portions.
  2. Roll each portion into a smooth ball without cracks.
  3. Keep the balls covered with a cloth to prevent drying.

Step 3: Make the Sugar Syrup

  1. In a saucepan, combine sugar and water.
  2. Bring the mixture to a gentle boil.
  3. Add lemon juice to prevent crystallization.
  4. Add crushed cardamom pods and saffron, if using.
  5. Simmer for 5–6 minutes until the syrup is slightly sticky.
  6. Keep the syrup warm.

Step 4: Fry the Gulab Jamuns

  1. Heat ghee or oil in a deep pan over low-medium heat.
  2. Test with a small dough piece—it should rise slowly without browning immediately.
  3. Carefully add a few balls at a time.
  4. Stir gently and continuously for even cooking.
  5. Fry until they become deep golden brown on all sides.
  6. Remove and drain on a plate lined with paper towels.

Step 5: Soak in Syrup

  1. Let the fried gulab jamuns cool for 2–3 minutes.
  2. Transfer them into the warm sugar syrup.
  3. Allow them to soak for at least 1 hour.
  4. The jamuns will absorb the syrup and become soft and juicy.

Serving Suggestions

  • Serve warm as a traditional dessert.
  • Garnish with chopped pistachios, almonds, or saffron.
  • Pair with vanilla ice cream for a delicious fusion dessert.

Tips for Perfect Gulab Jamuns

  • Ensure the dough is soft and smooth without cracks.
  • Fry on low heat for even cooking from the inside.
  • Do not overcrowd the frying pan.
