Ingredients

For the Chicken

  • 1 cup homemade or baked croutons
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons shaved Parmesan (optional)
  • Lemon wedges for serving

For the Caesar Dressing

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 2 tablespoons grated Parmesan cheese
  • Salt and black pepper to taste
  • 1–2 tablespoons water (if needed)

Instructions

Step 1: Prepare the Chicken

  1. Pat the chicken breasts dry.
  2. Rub with olive oil, garlic powder, paprika, salt, and pepper.
  3. Heat a grill pan or skillet over medium heat.
  4. Cook the chicken for 5–6 minutes per side or until fully cooked.
  5. Let the chicken rest for 5 minutes, then slice into strips.

Step 2: Make the Dressing

  1. In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic, and Parmesan cheese.
  2. Whisk until smooth and creamy.
  3. Season with salt and pepper.
  4. Add a little water if a thinner consistency is preferred.

Step 3: Assemble the Salad

  1. Place chopped romaine lettuce in a large salad bowl.
  2. Add croutons and grated Parmesan cheese.
  3. Drizzle the Caesar dressing over the lettuce.
  4. Toss gently until evenly coated.
  5. Top with sliced grilled chicken and shaved Parmesan.

Step 4: Serve

Serve immediately with fresh lemon wedges for extra flavor.
