Gajar Ka Halwa – Traditional Indian Carrot Dessert

Gajar Ka Halwa is a rich and delicious Indian dessert made with fresh carrots, milk, ghee, and nuts. This classic sweet dish is especially popular during winter when carrots are naturally sweet and flavorful. Its soft texture, aromatic cardamom flavor, and crunchy nuts make it a favorite dessert for festivals and family gatherings.

Ingredients

  • 1 kg fresh red carrots, grated
  • Half liter full-fat milk
  • Ghee 50 gram
  • Sugar 250 gram
  • Khoya 200 gram
  • ½ teaspoon cardamom powder
  • 10-12 cashews, chopped
  • 10-12 almonds, sliced
  • 2 tablespoons raisins
  • 1 tablespoon pistachios, chopped (optional)

Instructions

Method

Step 1: Wash, peel, and grate the carrots using a grater. Keep them aside.

Step 2: In a separate pan, bring the milk to a boil and keep it hot.

Step 3: Heat a portion of the ghee in a heavy-bottomed pan. Add the grated carrots and sauté on low heat for 3–4 minutes until they become slightly soft and aromatic.

Step 4: Pour the boiling milk into the pan with the carrots. Cook on medium to high heat, stirring occasionally, until the milk reduces significantly and the carrots absorb most of the liquid.

Step 5: Add the khoya (mawa) and mix well. Continue cooking for another 3–4 minutes until it blends smoothly with the carrot mixture.

Step 6: Add the sugar and stir continuously. Cook for 3–4 minutes more until the sugar dissolves completely and the halwa thickens.

Step 7: In a small tadka pan, heat the remaining ghee. Fry the chopped cashews and almonds until lightly golden.

Step 8: Pour the ghee and nut mixture over the halwa. Add the cardamom powder and mix everything thoroughly.

Step 9: Turn off the heat and transfer the halwa to a serving dish.

Step 10: Serve warm and enjoy your rich, homemade Gajar Ka Halwa. Garnish with extra nuts if desired.

Tips for Perfect Gajar Ka Halwa

  • Use fresh, sweet carrots for the best flavor.
  • Full-fat milk creates a richer texture.
  • Stir frequently to prevent sticking.
  • Add khoya (mawa) for an extra luxurious taste.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
