Avocado Corn Salad Recipe

Avocado Corn Salad is a fresh, colorful, and healthy salad made with creamy avocado, sweet corn, crunchy vegetables, and a light lemon dressing. It is perfect as a quick snack, side dish, or summer salad.

Ingredients

  • 2 ripe avocados, diced
  • 1 cup boiled sweet corn
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, chopped
  • ¼ cup onion, finely chopped
  • 2 tbsp fresh coriander or parsley
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt as needed
  • Black pepper as needed
  • ½ tsp roasted cumin powder

Instructions

  1. Add diced avocado, sweet corn, tomatoes, cucumber, and onion to a mixing bowl.
  2. Add lemon juice, olive oil, salt, black pepper, and roasted cumin powder.
  3. Mix gently so the avocado does not become mushy.
  4. Garnish with fresh coriander or parsley.
  5. Serve fresh and enjoy.

Serving Suggestion

Serve Avocado Corn Salad chilled with grilled vegetables, toast, soup, or as a light healthy meal.
