Hara Bhara Kebab – Crispy, Healthy & Delicious

Hara Bhara Kebab is a popular North Indian vegetarian appetizer made with spinach, green peas, potatoes, and aromatic spices. These kebabs are crispy on the outside, soft on the inside, and packed with nutritious green vegetables, making them perfect for tea-time snacks, parties, or healthy starters. Traditional versions commonly use spinach, green peas, and potatoes as the main ingredients.

Ingredients

  • 2 cups spinach (blanched and chopped)
  • 1 cup green peas (boiled)
  • 2 medium potatoes (boiled and mashed)
  • 1 green chili, finely chopped
  • 1 teaspoon grated ginger
  • 2 tablespoons fresh coriander leaves, chopped
  • 2 tablespoons roasted gram flour (besan)
  • 1 tablespoon breadcrumbs
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ teaspoon chaat masala
  • ¼ teaspoon dry mango powder (amchur)
  • Salt to taste
  • 2 tablespoons oil for shallow frying
  • 10–12 cashew halves (optional)

Instructions

Step 1: Prepare the Greens

Blanch the spinach in hot water for 1 minute. Transfer immediately to cold water, drain well, and chop finely.

Step 2: Make the Mixture

In a large bowl, combine:

  • Chopped spinach
  • Boiled green peas
  • Mashed potatoes
  • Ginger
  • Green chili
  • Coriander leaves

Mix everything well.

Step 3: Add Spices

Add:

  • Cumin powder
  • Garam masala
  • Chaat masala
  • Amchur powder
  • Salt

Mix until evenly combined.

Step 4: Bind the Mixture

Add roasted besan and breadcrumbs. Mix until the mixture becomes firm enough to shape into patties.

Step 5: Shape the Kebabs

Divide the mixture into equal portions and shape into round flat patties. Press a cashew half into the center of each kebab if desired.

Step 6: Cook

Heat oil in a non-stick pan over medium heat.

Shallow fry the kebabs for 2–3 minutes on each side until golden brown and crispy.

Step 7: Serve

Serve hot with:

  • Mint chutney
  • Green coriander dip
  • Tomato ketchup
